About five years ago, I was diagnosed with Celiac Disease. Since then, I am on a near daily search for tasty, easy and healthy snack and meal plans. Going gluten free isn't as hard as it seems but it also isn't always great fun. Roast Beef & Mozzarella Roll-Ups are a hit with me and my family thanks to their tastiness and versatility.
This quick recipe from Cindy Silver of Market Basket Nutrition is one of my favorites. Although the title states Mozzarella, that is a pretty little slice of Gouda right there in the photo. Which is the beauty of this recipe. You can make it taste different every single time by changing up one or all of the ingredients. Some of my favorite variations include:
Roast Beef, Mozzarella, grape leaf pickle and red onion (wonder what it would taste like wrapped in a grape leaf? Hmmm....)
Roast Beef, Swiss and dill pickle (I heat this one a little to melt the cheese a tad)
Or go completely out there and wrap up Gouda, ham and an apple slice
I'd love it if you would also share your favorite roll-ups or gluten free recipes because I'm always looking for something new to try. Lately, I've been on a search for a good gluten-free pizza crust. I have a recipe using cauliflower which I really like and will share later but I'd really like to experiment with other options as well!
